I Drank Chinese Grain Alcohol (Baijiu) in Six Demon Bag - Big Trouble in Little China | How to Drink

  • John Carpenters Second best film is one of my all time faves, lets nerd out about it, make Six Demon Bag, and try some Baiju.


    Oh man do I love this movie. It's so incredibly weird and wonderful and full of crazy 80's special effects, and demons, ghosts, vampires, lich's, bugbears, beholders... a veritable Monstrous Manual of wild stuff in here. Plus we've got Jack Bower, portrayed by Kurt Russell basically doing a goofball version of John Wayne but with a semi-truck. It's got Dennis Dun, James Hong, Victor Wong, Donald Li, and of course Kim Cattrall... Magic! Monsters! Adventure! And it's all in the reflexes...

    Stranger Things Season 3 has me thinking about the movies I grew up, and John Carpenter, specifically Big Trouble, feature large in my mind at the moment. In the scene before the Big Battle of this movie, Egg Shen, played by Victor Wong, prepares our heroes for battle with a "medicine" that most fans of the film call Six Demon Bag (I point out in this episode that that's not really right, but it doesn't matter) so they can enjoy a "Big Buzz" also, maybe see things other people don't see? It's not very clear. Anyway, I thought it was time I take a stab at making my own Six Demon Bag, and here it is.

    Six Demon Bag
    .5 oz. -or- 15 ml. Pineapple Juice
    1 oz. -or- 30 ml. Lime Juice
    Two Dashes of Elemakule Tiki Bitters
    .5 oz. -or- 15 ml. Ginger Syrup
    .75 oz. -or- 22 ml. Baijiu
    2 oz. -or- 60 ml. Appleton Estate 12 year Rum
    Shake and decant with Dry Ice
    Serve up

      I don't know if you can make a drink on it, but there is a forgotten gem, circa 70s I think, called bugsy malone. Starring a kid Scott Baio and Jodie Foster. Which was a musical. About 1920s prohibition gangsters. Played by little kids. It's pure wtf, but real fun with great songs. Look it up, it's a fun watch.

      FYI, the wet dog flavor in baiju is from a deep dive into the tails portion of the distillation. Western distillers avoid those notes in the tails and make more conservative cuts, but cultures and tastes differ greatly. To an Eastern palate that may be yummy. Who knows?

        Random thought and it never really occurred to me until right now. They allude to jacks extraordinary reflexes when wang chi doesn’t split the bottle in half and it flys at jack and he catches it almost instantly. The reaction time to catch that bottle would be insane.

                          As a laowai (non-Chinese foreigner) that lived in China for a couple years, I have drank a lot of baiju. And I can tell you, it is always digusting and terrible. Even most Chinese people agree that it's gross.

                                            Many years ago, a friend came to a "sukiyaki party" bearing tiny bottles from Chinatown San Francisco. This was served in thimble-sized cups, and can only be described as "herbal nail polish remover." And make you very, very intoxicated on very little. I heard the stuff was banned by the FDA shortly thereafter, as it contained toxic components.

                                              Nice video, dude. BTW, the liquor you used in the video - the "Moutai Prince" is actually an entry-level model of Kweichow Moutai and it is a blended baijiu. In Mainland China, low-end blended baijiu is usually used as seasoning liquor in kitchen and the "unblended" Moutai baijiu (probably called "Moutai Feitian", about $190 in US) is a popular liquor for banquet.

                                                                                            High end Baijiu is amazing! Got a taste at a Chinese restaurant a few weeks ago.

                                                                                            A family was celebrating and had a bottle of Wuliangye (first produced during the Ming Dynasty in China, Wuliangye literally means "Five Grain Liquor").

                                                                                            Rich, heavy aromas made me think earthy and fruity, with...something else. Perhaps like meandering through a dense, tropical forest.

                                                                                            The palate was a show stopper! So much flavour, it was difficult to pin down what I was tasting.

                                                                                            A sour, fermented fruit with hints of cacao nibs or ultra dark chocolate.

                                                                                            I had to look up tasting notes because I was having trouble articulating it.

                                                                                            So thick and intense (52% abv!!), as soon as I read "pineapple", it all started clicking into place.

                                                                                            Oily, yet crisp, I found it quite sweet as I sipped really small sips, trying to stretch out the experience.

                                                                                            As we were getting ready to leave, I finished the last bit in one, larger drink, and was struck by the oddest sensation. It felt like my tongue had gone dry, yet the flavours left the entirety of my mouth coated. Like when you're cleaning windows and you see the moisture appear and almost instantly disappear, leaving a light, protective film on the glass.

                                                                                            The taste lingered for well over an hour.

                                                                                            At $250-ish CAD, I'm not likely to buy a bottle any time soon, but I definitely want one for my collection eventually.
